Basic Bread Dough




Mix the follow ingredients in your mixing bowl.  Allow to rest until mixture become foamy looking.
·        
1/2 cup warm water
·         1/2 cup warm milk
·         1 TB active dry yeast (or .25 ounce package) – store in your freezer
·         1/3 cup white sugar (reduce to 1 TB if making a savory dough)

After above mixture has “activated” add the following ingredients and knead until a soft dough is formed.  This may take 10-15 minutes.

·         1 egg
·         1/3 cup butter, softened (or oil)
·         1 teaspoon salt
·         3 ½+ cups all-purpose flour

After dough no longer sticks to sides of the bowl or counter top set aside and allow to rest.  You have three options:

  • 1.      Quick rise: put in oven at 150 degrees and allow to rise for 20 min.
  • 2.      Traditional rise: cover and allow to rise on counter for about 1 hour.
  • 3.      Extended rise: cover and place in refrigerator for 6-8 hours.


Once dough has risen (doubled in size) you are ready to make bread, dinner rolls, crescent rolls, cinnamon rolls, breadsticks, scones, donuts, pizza crust (doesn’t require a second rise) etc.

·         Punch dough down and form into whatever you want to make!

·         Allow to rise a second time using same method as above. 
·     
         Or FREEZE the dough. If you choose to freeze, simply remove from freezer when ready to use and allow to defrost on counter through out the day for dinner, or over night for breakfast.  As it defrosts it will also finish it’s second rise and be ready to bake.

Bake at 400 degrees until golden brown.

Old Fashioned Chicken Chow Mein

Saute in sesame oil until half cooked:
-1 bundle celery cut crosswise into small pieces
-1 lrg. onion cut into slivers
-1 tsp Soy Sauce
-Salt and pepper

Add and continue to saute until tender:
1 bag sprouts

Add to mixture and simmer to thicken:
1/2 C Water
1 TB Cornstarch

Add:
Chicken or Turkey (I like dark meat and to cook in sesame oil)

Serve on top of crunchy chow mien noodles or stir into above mixture to soften.

Gelatin Pinwheel/Fruity Roll-ups

Recipe:

1 (3 oz.)pkg. jello
1/2 cup water
1 1/2 cum miniature marshmallows(or 12 large marshmallows)

Lightly spray an 8 or 9 in pan square pan with non-stick cooking spray and make sure it is s[read well.

Bring water to a boil.Add gelatin and stir until dissolved completely. Remove from heat.

Add marsh allows and stir until melted. Creamy layer will float to the top. (If you melt marshmallows too fast- on stove top heat, you will end up with out a bream layer.They will still work, but will not look as nifty.)

Pour into prepare pan. Refrigerate 45 minutes or until well set- they should be very firm and easy to handle. Loosen edges with a knife. Starting at one end, roll up tightly. with seam side down, cut into 10-12(1/2)inch slices. We found it easiest to cut with a piece of thread or dental floss. Just put the string around roll-up, cross and pull.

Serve immediately or refrigerate until ready to serve.

Chocolate Brownies

1 cup butter melted
3 cups white sugar
1 tablespoons vanilla extract
4  eggs
1 1/2 cups all -purpose flour
1 cup unsweetened cocoa powder
1 teaspoon salt
1 cup semisweet chocolate chips


Preheat oven to 350 degrees F(175 degrees C).Lightly grease a 9x13 baking dish.

Combine the melted butter, sugar, and vanilla  in a large bowl. Beat in the eggs, one at a time, mixing well after each, until thoroughly blended.

Sift together the flour, cocoa powder, and salt. Gradually stir the flour mixture into the chocolate mixture until blended. Stir in the chocolate morsels. Spread the batter evenly into the prepared baking dish.

Bake in preheated oven until an inserted toothpick comes out clean,35 to 40 minutes. Remove, and cool pan on wire rack before cutting.


Truffles

Dark or Milk Chocolate
1 lb Dark or Milk Chocolate
1 C Heavy Whipping Cream
1 tsp flavoring of choice (or vanilla bean)


  • Melt Chocolate in a double Boiler
  • Bring cream to a boil and stir into chocolate until smooth (do not use an electric mixer)
  • Add flavoring and chill in refrigerator until HARD
  • Roll into Small balls and refrigerator 1 hour
  • Melt desired chocolate in double boiler
  • Dip balls into chocolate and use a toothpick to smooth top


White Chocolate
1 lb white chocolate
3/4 C Heavy Whipping Cream
1 tsp flavoring of choice
2 Tbs Jam


  • Same directions as above

Cabbage Ramen Salad

Salad
1 head shredded cabbage
3 green onions sliced
2 pkgs ramen noodles broken
4 Tbl sesame seeds
 l cup sliced almonds toasted on cookies sheet 10 min @ 300

Dressing:
4 C Salad oil
4 Tbl sugar
2 tsp accent
2 tsp salt
l tsp black pepper
6 Tbl rice vinegar
l seasoning packet from ramen chicken

*mix in shaker & let flavors blend
*toss together

Thai burgers with peanut sauce


6 servings
341 calories per serving

Sauce: 70cal per TBS
2 Tbsp. peanut butter- 200
2 tsp. soy sauce- 20
1 ½ tsp. sesame oil-60
1 tsp. water
1 tsp. rice vinegar
1 clove garlic

Burgers:
½ C. chopped green onions
1 Tbs. chile paste w/ garlic
2 tsp. ginger
2 tsp. soy sauce
¼ tsp. salt
1 1/2 - 2 pound chopped chicken

4 (2 oz.) sandwich rolls
1 C. onion or alfalfa sprouts

Grill burgers. Top with ¼ C. sprouts and 1 Tbsp. sauce
