Here is a guestimate of what I put in:
1/2 large onion chopped
1/2 red bell pepper chopped
2-3 stalks celery chopped
2 TBS. minced garlic
Saute above in 1 TBS. oil until tender.
Add :
2 C. Chicken Broth
1 C. brown rice
2-3 Cans beans
2 cans chopped tomatoes (or fresh tomatoes from my garden in the blender)
1 can chilies
A sprinkle of creole seasoning
Simmer until rice is tender
Add 1/2-3/4 lb. sliced smoked sausage
*We enjoy with a side of cornbread
