Thai Coconut Rice Pudding

2 C. Uncooked Black Rice
4 1/2 C. Coconut Milk
1/2 C. Sugar
2 tsp. Salt

-Cook rice ntil tender. (do not use a rice cooker as the rice will stain it)
- As the rice is cooking: mix coconut milk, sugar and salt in a medium saucepan. 
- When rice is done add to coconut milk mixture.
- Stir well for it to absorb.  Let stand 10-20 minutes.
- Serve warm over vanilla ice-cream
