Aebleskivers

Custard:
Bring to boil over medium heat:
2 C. Milk
1/4 C. Sugar

Remove milk from heat and add:
1/4 C. Cornstarch
1/3 C. Sugar
2 egg yolks
1 egg

Return to heat and stir constantly. Return to boil and remove from heat again. Add:
2 Tb. Butter
1 tsp. Vanilla

Let cool while you make the aebleskivers.

Aebleskivers
Makes 75
35 calories per aebleskiver w/o custard

Beat and set aside:
4 egg whites (keep yolks for later)

Mix together then fold in egg whites:
4 C. Flour
4 tsp. Baking Powder
2 Tb. Sugar
1 tsp. Baking Soda
1 tsp. Salt
4 egg yolks
8 Tbs. melted Butter
4 C. Buttermilk (I never have buttermilk, I use milk mixed with vinegar or lemon juice, let it set for a few minutes to "curdle")

Cook on stove top over medium heat in an aebleskiver pan.  Coat pan well with pam.  Turn using a skewer. In the olden days they would use a knitting needle. Use a pastry filler to fill with custard. (We also use no sugar vanilla pudding for a quicker and lower calorie version)
