Southern Grits Casserole


6 C. Water
2 C. Uncooked Grits
½ C. Butter, divided
3 C. Shredded Cheese, divided
1 lb. Ground Sausage
12 Eggs
½ C. Milk
Salt and pepper

-         Bring water to boil in large saucepan,  Stir in grits. Reduce heat, cover and simmer about 5 minutes, until liquid has been absorbed. 

-         Mix in half the butter and 2 cups cheese.  Add sausage. 

-         Mix milk and eggs and pour into skillet, lightly scramble then mix into grits. 

-         Pour into 9X13 pan, dot with remaining butter, and cover with remaining cheese. 

-         Bake at 350 for 30 minutes.
